A Rubee is a type of currency found in Super Paper Mario. They resemble small red gems, as do Flipside Tokens. Their name may be a combination of "rubies" and "Rupees", the currency in The Legend of Zelda series.
In Chapter 2-3, Mario breaks a vase belonging to Mimi, under the guise of Merlee's maid. Mimi orders Mario to pay for the vase in Rubees — one million of them, to be exact. Mario only had Coins on him, however, so Mimi puts him to work to pay off the debt. Mario can work for gaining the rubees, or he can found a massive hoard of Rubees with the help of Slim, allowing him to pay off the debt.
