Pianta Tokens are blue coins in Paper Mario: The Thousand Year Door with Don Pianta's face on it. They're only good at the Pianta Parlor where you win them from the slot machines. You can trade them for items and badges from Lahla the Boo working at the desk. The change machine trades a bunch of regular coins for a few tokens, which is a bad deal since you can get some of the tokens for free if you are good at the mini-games.

The mini-games have some Pianta Tokens scattered in their levels, and since the games cost 10 of them, the number of tokens over 10 is how many you've won. In other words, if you win 9 tokens, you just lost one from the game.

The best way to get more tokens is the Plane Game because it has spots to multiply the amount you win.
